    I’m addicted to ferments. I find the process really enhances the taste of the food. I just wish there was more of a variety in the store so I wouldn’t have to make them myself.

    Good advice, although I would caution people who need to watch their sodium intake to always check labels, some of these products like pickles and miso are very high in salt!

      Salt gets a much worse rap than it should, although I too caution about too much of it. I think sugar and refined starches are a much bigger danger to our health than salt. I make it a habit to avoid processed foods as much as possible (though I confess to loving sopressata and prosciuto, but i limit myself to only a couple of occasions a year). For cold cuts, I cook my own chicken breast, turkey breasts or lean roast beef. Occasionally I have some sliced ham if it is organically raised and minimally processed. I sometimes buy bacon if it is low salt and uncured with nitrates.

    I’ve made a habit of keeping a large jar of homemade pickled eggs in the door of the fridgerator made out of beet juice and vinegar and cloves, cinammin, sea salt and even homegrown chives that is a cholesterol cutter to counteract the cholesterol content in the egg itself. Is a nice easy treat.

    We make fermented watermelon rind. My children look forward to it every spring, they try to sneak out some before it’s fully ready🙂
